Crock Pot Apple Butter

• Prep Time: 10 mins • Total Time: 10 mins • Servings: 8 Ingredients o 11 apples o 1/2 cup water o 1/2 cup sugar o 2 teaspoons cinnamon o 1/2 cup brown sugar
Directions 1. Wash and quarter apples. Place in 3 1/2 to 4 quart crock pot. Add all other ingredients. Cook on low all day. 2. This also freezes well

Copycat McDonald's Shamrock Shake

  • Prep Time: 5 mins
  • Total Time: 5 mins
  • Servings: 2

Ingredients

    • 2 cups vanilla ice cream or 2 cups soy ice cream
    • 1 1/4 cups 2% low-fat milk or 1 1/4 cups soymilk
    • 1/4 teaspoon mint extract
    • 8 drops green food coloring

Directions

  1. Combine all ingredients in a blender and blend on high speed until smooth.
  2. Stop blender to stir with a spoon if necessary to help blend ice cream.
  3. Pour into 12-ounce cups and serve each with a straw.
  4. Happy St Patrick's Day!

Day 7 - Best-Ever Hot Cocoa Mix

This is perfect for those cold mornings or evenings when you want something hot that isn't coffee. I'm also thinking that it could be a cute little gift-layer it all in a mason jar with a little bag of mini marshmallows.

Best-Ever Hot Cocoa Mix

Forget about the watery hot cocoa with dehydrated marshmallows you sipped as a kid. Our “instant” hot cocoa recipe is creamy, rich, and big on chocolate flavor.

Makes about 20 servings

cups nonfat dry milk

2

cups confectioners' sugar

1 1/2

cups Dutch-processed cocoa powder

1 1/2

cups white chocolate chips

1/4

teaspoon Salt

Combine ingredients in large bowl. Working in two batches, pulse ingredients in food processor until chocolate is finely ground. Store in airtight container for up to 3 months. To make hot cocoa, stir 1/3 cup of this mix into 1 cup of hot milk. Top with whipped cream or mini marshmallows.

· Nonfat dry milk adds a sweet dairy flavor to the cocoa, especially if you reconstitute the mix with hot milk instead of hot water.

· Confectioners’ sugar works best in this recipe. It dissolves quickly and the cornstarch (an ingredient manufacturers add to the sugar to prevent clumping) helps thicken the cocoa.

· White chocolate provided our cocoa with a soft, creamy texture and pushes the chocolate flavor to new heights
